Oldest three-star head chef
Jiro Dreams of Sushi was a documentary released in 2011 about Jiro Ono and his three Michelin-star restaurant Sukiyabashi Jiro; he was 85 at the time. His restaurant had been open since 1965 and was the first sushi restaurant to win three stars. Unfortunately, he lost the stars in 2019, not due to a quality decline but instead due to exclusivity. Jiro is the oldest ever head chef of a three-star restaurant at 94. Even today, in 2023, nearing 100, he occasionally cooks at the restaurant.

In conclusion, Sukiyabashi Jiro became my best dining experience ever while I have visited over a hundred Sushi restaurants in Japan. Totally worth it! I will get the chance to visit there in winter.
